Killer BBQ Kalzone

Never attempt to make someone else's recipe the same way they did. Especially if the recipe is a well-established, well-loved Italian classic. My boy's Ma makes a kalzone so killer it alters the spelling of the word. Thanks to Lady Di for showing me the ropes, below is my take on the klassic.


 

4 slices bacon
1/2 small red onion
2 garlic cloves
2 medium chicken breasts
3/4 c BBQ sauce of your choice (ellebeezy recommends Stubbs)
1 lb pizza dough (Trader Joe's, or Whole Foods)
1 1/4 c shredded mozzerella cheese
1/4 c parmesan cheese
1 egg white
Italian herb blend
Sesame seeds
Cook bacon until crispy. Break into little pieces. And if you love bacon as much as I do you're gonna wanna cook the chicken in the bacon grease. Once chicken no longer has any pink, remove from heat and shred. Chop onion and garlic.Add to chicken and bacon. Stir in BBQ sauce. Set mixture aside. 
Divide dough in half. Roll out each half so that dough is about 1/2-1/4 inch thick. Place 1/2 of BBQ mixture in the center of dough. Repeat. Sprinkle cheese over BBQ. Fold up the edges of the dough forming a tube (Calzone is Italian for trouser or stocking. Keep this in mind while forming dough tube). 
Place your two well formed dough trousers in a lightly greased pan. Brush the tops of calzone with the egg white. Sprinkle with Italian herbs and sesame seeds.
Cook calzones in 425 degree oven for 30-40 minutes.Pull out and let stand for 5-10 minutes before enjoying. Makes 3 to 4 servings. It's best to have extra BBQ on hand.

when the lobsters crawled behind the fridge...

We live in a throw-away moment. Because of digital cameras everyday is Annie Hall at the beach house,

We take photos, we remember everything, so sometimes we remember events, we remember when the lobsters crawled under the fridge, but we forget why the moment was important, why it was funny, why it was ... memorable. We throw the picture in a bin, we throw our memory aside.
Permanent things are recorded on film, but our lives are all digital.

miss me?

So I haven't updated in awhile. Been busy with moving and living but I have lots of yumz for you all coming in 2010!  In the meantime, I have been munching the hell out of alphabet pasta.
